Perfect for high temperatures. Iron enables the Maillard reaction and uniform heat distribution. Excellent cooking results: the dough does not soften, golden and crusty pastries. Blue color due to a surface thermal treatment: temporary protection against oxidation; no non-stick coating. Blued iron undergoes a seasoning process, it gets darker and naturally non-stick the more it is used. Extremely robust tray: remains perfectly flat.

This DeBuyer 8" Force Blue is our everyday egg/omelette/pancake pan. Fried eggs slide off this pan. Use it for grilled cheese, browning pita bread, slice of breakfast ham, or hash browns, tater-tots, etc.
Durable and hardwearing workhorse, holds its shape, no warping at all. Easy to clean. Scrape it (if needed) with a metal spatula, wash it with dishsoap and heat it briefly on stove top to dry. Becomes non-stick with everyday use.

This 8.75" crepe pan is the best. Nice size for a single crepe, pan is easy to handle and maintain. Purchasing an additional cover for the handle is reccomend to prevent burning and for comfort. Cleans easily and every so often it may be necessary to clean the sides with a plastic pot scrapper to prevent a build up of batter residue.
All in all, a perfect crepe pan.
