The extra long stem allows the probe to reach further into a large cooking vessel. The dial face includes temperature zones indicating jelly, soft ball candy, firm ball candy, hard ball candy, hard crack candy, caramel, and deep frying temperatures. An adjustable metal indicator rotates around the dial face to mark specific temperatures.
