The fry pan features a flat bottom and flared sides that make tossing foods effortless and allow for easy turning with a spatula. The All-Clad frying pan is great for cooking at higher heat with oils to develop foods with full rich flavour, colour, and crisp texture. Designed for professional use, COPPER CORE® features 5-ply construction with a copper center, which transfers heat and spreads it quickly, evenly, and precisely throughout the cookware, all the way to the rim.
The super-responsive cookware works well for recipes that require precise temperature control, such as delicate sauces. COPPER CORE's 18/10 stainless steel interior offers a highly polished cooking surface with a starburst finish for superior stick resistance, easy maintenance, and non-reactivity with food to preserve true flavour. Permanently attached with stainless steel rivets, the cookware’s stainless steel handles offer a heat choke to reduce heat transfer, a bolster for added control, and a comfortable contour that caters to a chef’s underhand grip. All- Clad products are known for two points. Being expensive and very well made. We have several pieces from the copper core line at home and I can’t recommend them enough. Keep them clean, follow the manufacturer’s guidelines on maintaining them and they will last longer than you.

This is fantastic for a family of 4 or 5 for a pasta dish. I like to cook the pasta in the sauce like a risotto. This is ideal for this kind of technique because of the round shape. For example, I sear the guancale (or bacon) in the pan. Remove a bit of fat and put the pasta in the dish with the egg/parmesan mix. I can stir and finish the pasta cooking directly in the pan. It is also perfect for a risotto for 4 or 5 portions. It is not to heavy and works fine on induction.
