The BevLes Combination Holding & Proofing Cabinet offers durable aluminum construction and is available in insulated and non-insulated models. It features universal extruded pan supports to accommodate a wide variety of pans and screens. The see-through Lexan door with heavy-duty hinges includes positive closing latches and a full perimeter gasket for a secure seal. User-friendly, bottom-mounted controls allow for independent heat and humidity adjustment, with temperatures ranging from 80°F to 180°F (27°C to 82°C). The water reservoir holds up to 5 quarts (4.7 liters), and the "cast-in" humidity system prevents element burnout while providing added safety. All BevLes proofing and holding cabinets include a self-draining feature for excess moisture collection below the cabinet base into a standard bun pan Heavy-duty swivel-type plate casters with 5" (127mm) rubber wheels, two with locks, are provided for easy mobility and stability.
