Description
The Japanese Shotoh knife from the Miyabi 5000MCD 67 series represents an elegant addition to your kitchen. The pattern of this knife gives a unique look and design to your blade. The floral pattern is unique in each knife and is a characteristic of the damask design. The polished “black ash” wooden handle has unique graining so no two knives are the same. The handle ends in a sophisticated cap. The Shotoh knife is ideal for cutting and peeling fruits and vegetables.
The blade of this CRYODOR ice hardened knife is made of a total of 133 thin layers. These encapsulate the core of the MicroCarbide MC66 powder steel sheet. The blade is subjected to a special hardening process during its production to give a hardness of 66 Rockwell to the blade, providing a knife with excellent stability and conservation of the edge. The knife acquires its sharp end thanks to the Honbazuke technique, a traditional Japanese process in which both sides of the blade are sharpened and polished in three different ways.
The knife has a D-shaped handle to ensure that the blade slides quickly and accurately through the food, regardless of the cutting technique used and avoiding fatigue after extended periods of work.
